Here's our version of the no-bake energy bite recipe that includes our pumpkin and flax seed Phase 1 blend:

INGREDIENTS:
  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree (canned or fresh)
  • 1 cup almond butter (or any nut/seed butter of your choice)
  • 1/2 cup honey or maple syrup (adjust to your desired sweetness)
  • 1 container phase 1 ground pumpkin & flax seeds
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup mini chocolate chips (optional, for added sweetness)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • A pinch of salt

INSTRUCTIONS:

1. In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey or maple syrup, ground flax seeds, shredded coconut, mini chocolate chips (if using), vanilla extract, ground cinnamon, and a pinch of salt.

2. Mix all the ingredients thoroughly until well combined. The mixture should be sticky and easy to mold.

3. Using your hands, shape the mixture into small bite-sized balls. If the mixture is too sticky to handle, you can refrigerate it for about 20-30 minutes to make it easier to roll.

4. Place the energy bites on a baking sheet lined with parchment paper or a silicone mat.

5. Once you've rolled all the mixture into balls, refrigerate the energy bites for at least 30 minutes to set.

6. Once chilled and firm, transfer the energy bites to an airtight container and store them in the refrigerator. They should last for up to a week.
